Simnel Cake is a British Easter tradition. A light fruitcake with a layer of marzipan baked into the centre, topped with eleven marzipan balls to represent the eleven apostles of Christ, minus Judas. Simnel cake has been eaten since medieval times as both a rich, sweet treat.
